Red Pepper Alfredo

This is from the book Eat This, Not That by David Zinczenko and Matt Goulding. As a self professed addict to Chicken linguine alfredo this recipe was a welcomed addition to my meal plan. (Photo coming soon)


You will need:

10 oz dried fettuccine

1 and 1/2 Tbsp butter

1 and 1/2 Tbsp flour

1 cup Milk

1/4 cup half and half

3/4 cup chopped bottled roasted red peppers

2 cloves garlic Halved

1/2 cup grated Parmesan

Salt and Pepper To Taste

Bring large pot of salted water to a boil

Add pasta and cook until al dente

Meanwhile melt butter in saucepan over medium heat. Stir in the flour and cook for a minute until the two are fully incorporated. Slowly add the milk and half and half whisking to avoid lumps. Add the Red Pepper and Garlic. Turn heat to low and simmer for ten minutes.

Pour mixture in blender and puree until smooth and uniform in color. Return to pan and stir in Parmesan. Simmer until pasta is done cooking.

Add pasta to sauce and coat evenly. Divide amongst 4 bowls or plates.

The Biggest Loser Season 10 Episode 3-5

I haven't blogged about the show for the last couple of a weeks because I have had important family stuff, school stuff etc. Anyway, there are way to many game players for me this season. I would want to win $$$ as much as anyone but your health should not be a game. If I was on this show I would never be able to vote off someone just because they are a threat either. I would have to base my decision on who I think still needs to be there. Who is not ready to go home. Other than the endless game playing good season. I haven't really picked a favorite yet though. I can relate to the woman that lost her little boy to cancer though. I didn't lose my child I lost my nephew but my heart was shattered for years before I learned to pick up the pieces and go on. I spent alot of time angry with God/Life. Well thats all I am going to say today. Hopefully I can blog more about the show next week. (((hugs))) to all!

The Biggest Loser Season 10 Episode 2

I can't believe I forgot to blog about The Biggest Loser this week! Episode 2 had alot of surprises in store including the new placement of the yellow line. I am not so sure how I feel about that. We will have to wait and see but it seems to put a very unfair disadvantage on the women. The 8 on the bottom half of the line had to compete in a challenge to "earn" their right to stay until it was narrowed down to 2 players who would be up for elimination. Consequently this would come down to the oldest player and the youngest player . In the end they chose to save the oldest. (Tina) The youngest player (Ally) has done well on her own. She has lost an amazing 60 lbs. This is no thanks to her mother who has done nothing to support her. She even had chocolate laying out in the open to welcome Ally home. I am so happy Previous Biggest Loser Danny has been available for Ally as a support system. I can definitely relate to Ally. My own family has definitely been a challenge as I have attempted to take the road to better health. It is not uncommon for them to sit under me eating chips, candy, or ice cream tainting me asking if I want some. " You know you want some." they would say. or, "I sure wish you could have some of this." I guess sometimes you just have to step out on your own and look for a support system outside of the home. I hope my family comes around some day. In the mean time I just need to worry about me. Thanks Ally.

Out with the soda (Again)

So I decided rather than changing a thousand things at once like I did before I am going to slowly make small changes towards where I need to be. The first thing up is giving up soda. Anyone that knows me knows that I am a Mountain Dew addict. Before when I lost 40+ lbs I had completely given up soda. Then I slowly started drinking it again. At first I promised myself I was only going to drink one a day but that didn't last long. Eventually my soda drinking was worse than before. On some days drinking anywhere from 6-10 cans a day. Way to much. So here I am again. I have been 5 days soda free. The promise I have made with myself is one small change towards better health every 14 days. Next up is parking at the furthest available parking spot when I go out on errands etc. I have a buddy I have joined with this time. Her name is Tara. We are going to keep each other going. I now have a domain name! Yahoo!

I finally bought my first domain name. I have been wanting to do it for a while but money has been really tight. However when I came across a special on yahoo domains for $1.99 I thought why not. Then I had the trouble of trying to pick a domain name I liked. I started to go with marcialoyd.com but I wanted something more original than just my name.Then I thought about it some more. To me, this is so much more than weight loss. I want a happy, successful life all the way around. I thought and thought. Then it finally hit me. I remembered seeing a picture on Facebook of a Jillian Michaels quote. It said, Why choose failure when success is an option. So that folks is how I came up with my brand new domain. Prayers Appreciated

About a week ago Carol had a large knot come up on her side. In the last week we have been to a multitude of doctors. At first it was diagnosed as an abscess. Then it was diagnosed as a fibroid tumor. and then as a lioma. Three doctors, three different diagnoses. On October 6th we will be going to a surgical oncologist who hopefully will be able to tell us once and for all what it is. I can say she has been cat scanned from head to toe and received a mammogram along with an array of blood testing. All these tests excluded cancer. Thank God. But we still need to find out exactly what it is and she will have to have it removed because it is causing her alot of pain. So keep us in your prayers that she can get this taken care of and FINALLY start feeling better. Thanks everyone. xoxo
